Seasoned Pinto Beans
Ingredients:
10 lbs. dry pinto beans1.0 oz. red pepper
1.0 oz. black pepper
1.0 oz. salt
2.0 oz. granulated garlic
1 cup sugar
2 oz. chili powder
2 ham hocks
2 diced onions
- Wash pinto beans thoroughly until clean, and allow to soak for several hours
- Cook beans at a ratio of 10 lbs. of beans to 3 parts water
- Add all dry ingredients except sugar and chili powder
- Beans will cook for several hours, stir occasionally and add water as needed
- Just before beans are done, add sugar and chili powder. Taste and add additional seasoning as needed
- When done, let beans rest
- Transfer to large container, and cool down with ice and water
- Allow to cool for at least 4 hours, and refrigerate
Seasoned pinto beans will serve 200 persons at 3 oz. a serving - Bon Appetit!
